Summer Cream Puffs (Red, White and Blue)

Ingredients:

  • 1 tablespoon raspberry or strawberry jam
  • 6 frozen, pre-made puff pastry pieces
  • 1 container of whipped topping
  • 1 cup Rainier Fruit Cherries (any variety), pitted and chopped
  • 1 cup Rainier Fruit Organic Blueberries, rinsed and dried
  • 1 tablespoon raspberry or strawberry jam
  • Mint leaves, for garnish

Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 30 minutes minutes
Serves: 6

Instructions:

  1. Bake puff pastry’s according to directions
  2. Remove from oven and allow to fully cool
  3. While puffs are cooling, mix together blueberries and cherries with jam to create glaze (can add more jam to create heavier glaze if preferred)
  4. When cooled, separate each pastry piece in the center creating a top and bottom section
  5. Add dollop of whipped topping to bottom slice of each puff pastry, top with blueberry cherry mix and cover with top slice of puff pastry
  6. Add additional whipped topping and blueberry cherry glaze
  7.  Add mint leaf for garnish
